I don't know the % of slope assigned to each colour.

To explain further. What I was asking was if there is in the app or user manual a colour palette similar to the one in the screenshot to know the % slope.
For the other line styles, speed, heart rate and ..... there is no colour palette either.

there is no absolute scale of the colors vers. %. The line is always colored relatively within the whole track, i.e. the steepest parts are dark red, the flattest parts are blue. The accurate slope angle of the track is displayed either in the track recording panel or on a dashboard:
