Does anyone know how to add the mtbmap.no or mtbmap.se maps? The MTB Europe map is not as easy to read.

does have these maps other benefits than MTB Europe, please? Regarding MTB Europe - do you mean that captions are too small? Please check settings: Menu > Settings > Advanced features > Map resolution

The issue is the legend/key. On the Mtbmap.cz map, the different grades of terrain difficulty are hard to distinguish because they are all purple. They differ by dash-size. In contrast the mtbmap.no and .se maps both have different colours for different difficulty grades. Also there are 'recommended' good quality routes and the opposite.
I do not know if it would be possible to get the routes as an overlay and import over a different kind of topo map?

I'm sorry but we do not plan to add mentioned maps into the Locus app. I can suggest three possibilities
- download LoMaps maps from Locus store. These maps display the grade similar to MTB Europe (3 grades defines by pink color). But I think that readability is much more better than MTBEurope https://docs.locusmap.eu/doku.php?id=manual:user_guide:maps_locusmaps
- you can try community OpenAndroMap maps that should have some benefits for MTB
- finally you can add mtbmap.no manually via custom providers settings https://docs.locusmap.eu/doku.php?id=manual:advanced:customization:online_maps
