What is the line that appears during track recording?

During track-recording, a red line (with arrows) appears on the map. It emerges from the tip of the large blue arrowhead and points in the direction of travel. Here are three examples of the red line while I was moving:
- What is the proper name of this line?
- Where is it described in the manual?
- Can I prevent it from being displayed? (The blue arrowhead is sufficient.)
